Abstract

ABSTRACT

This purpose of this study was determine the optimization of room temperature and storage time of instant Cemue while still standardizing on food quality that has been determined. The research was carried out from November to December 2019 at the Integrated Laboratory of the INTAN Yogyakarta Agricultural Institute.

This research develops a model by analyzing the constant rate of growth of moisture content and free fat content (FFA content) which is expected to be able to predict or predict optimal room temperature and optimum shelf life of instant Cemue during storage. The study was carried out using three storage temperature levels with three replications, one of which was the control (room temperature), namely at 30.5 oC. The study was conducted for 28 days with an observational design on days 0, 7, 14, 21, and 28. The study was conducted to observe the water content with an equilibrium value of 3%, as well as for the FFA content with an equilibrium value of 2%. Research data were analyzed using the Excel and Sigma Plot application programs for constant analysis of the growth rate of moisture content and FFA content during storage and for analysis of non-linear regression equations.

The results of the research are in the form of an equation formula that can be utilized in estimating the optimum storage room temperature and optimal storage time for instant Cemue during storage. The research results were quite valid/valid with a coefficient of determination R2 > 0.95, with optimal storage temperature at 34.6 oC and optimal storage for 320 days.
